		<description>Patti - ounces are actually &quot;American&quot; measurements (metric is grams), but on average one egg white is about 1 oz and one egg yolk is about 1/2 oz.  So 3.25 oz would be 2 jumbo eggs or 3 medium/large eggs?  I don&#039;t know because I usually measure them.  Since this recipe came from my pastry course, when they give weights, we always weigh.  When they give volumes, we measure volumes.  Has to do with density (one cup of eggs does not weigh the same as one cup of confectioner&#039;s sugar - for instance).  Hope that helps!</description>
