I still hope to order a batch of acetate some day, it makes for some gorgeous presentation ;) This is a wowser of a recipe. I love it (sweet and tart). In my pastry kitchen I have access to acetate sheets but at home I assemble all layered custard/curd/mousse cakes in parchment paper lined springform pans.
