Dishinanddishes - I have to settle for Whole Foods because we don&#039;t have Trader Joes :(  I think you could try 1) pan frying the shrimp side and then baking the toasts, or just broiling/baking them??

Lily - I&#039;m thinking yes, but I&#039;ve never tried baking them before.  Someone suggested broiling.  That might work?

Chocolate and Toast - Not a rube at all, you just haven&#039;t hung around Americanized Chinese restaurants much ;)

Asianmommy - you&#039;re right, the wild-caught are much better tasting to me too.

Mrs. E - I didn&#039;t even notice that one until you mentioned it!  I guess Mike Tea was too distracting? :)  The shrimp mousse actually stays on the bread very well while frying.  I didn&#039;t have a single one &quot;un-dock&quot;!
