The lobster filling was perfect: rich, but not too heavy. The pastry was ridiculous lovely buttery flakiness. I served the vols-au-vents with maitake mushrooms, and the flavors complemented each other perfectly. And the whole process was surprisingly straightforward, thanks to your well-written recipe. Wow. Seriously. You totally rock. Keep taking lots of photos of those aspens for me, a Coloradan (Coloridian, my family used to say ... like midichlorian?) far from home.
