secret sauce

I like potato chips very much. I like most salty snacks very much. And because I know myself so well, I don’t buy them at the grocery store so that I won’t have any in the house when I get munchy. The other day, I walked into the kitchen feeling peckish and what did we have? Cinnamon buns with homemade cream cheese frosting, fudgy and chewy brownies, chocolate chip cookies, apple cranberry crisp, ice cream, and several pounds of high quality dark chocolate. Blegh! I didn’t want any of those… I’m not a fan of sweets like some folks. I puttered about the kitchen and finally settled on washing some grapes and eating those. That’s how it is supposed to work out, but I had potato chips on the brain for many days.

In fact, I picked up some Cape Cod salt and vinegar potato chips at the store yesterday. But those are for skiing because you need something fatty and salty to convince you NOT to spend $10 on a burger at the summit restaurant. For sandwiches, I got roast beef and muenster cheese (I’ll be honest, turkey sandwiches will send me straight into the line for a $10 burger – I crave beef when I ski – plain and simple). Jeremy calls it roast beast and monster cheese. It is a favorite of ours. Which got me thinking about where I first had roast beast and monster… at the Williamsburg Cheese Shop in Colonial Williamsburg (bastion of idiot tourists from hell). It’s one reminder of why, unlike Jeremy, I loved high school.

I took several classes at the College of William and Mary in my Junior and Senior years of high school. That meant I got a coveted parking sticker because I had to drive to class! It also meant that I had several free hours during the week when my college classes didn’t meet. I used to wander over to the Cheese Shop and pick up one of those famed amazing kick ass sandwiches. Roast beef with muenster on french with house. HOUSE. Ever see the episode of Arrested Development (thanks Nicole!) when Gob is reading the country club menu to Lucile 2 and he says, “Club SAUCE!”? It’s like that. I mean, the house dressing is awesome and it’s also secreto! It’s so good, they even sell ends and sauce (the bread ends to dip into the sauce). People buy this and Eat It.

Perez and I have discussed it’s composition at length. He has experimented even. I’m not so hardworking as Perez, so I went online and found a post that listed the ingredients but not the proportions from a “disgruntled” employee of the Cheese Shop. So in addition to my chips, roast beast, monster cheese, and french bread, I purchased: mayonnaise, dijon mustard, and steak sauce. But really now, the REAL ingredients are mayonnaise, Boar’s Head mustard, and London House steak sauce. Safeway doesn’t carry those brands, because they (Safeway) suck. I won’t get into why I hate the local grocers right now.

I can’t say I got the proportions right, but it’s close. I’ll let Perez mess with it and we can compare notes. For now, I’d say 3 parts mayo, 2 parts each of the other ingredients. I’m guessing it would help if I had bought the correct brands, but the steak sauce I used was Lea Perrins made with Worcestershire sauce (because all the rest looked nasty).
