shredded beef tacos

I made shredded beef tacos for dinner tonight. I know it isn’t barbecue, but this is a recipe I hadn’t done in a while and I love the combination of lime, corn, and avocado. The beauty of it is that it uses a cheap cut of beef in a marinade of lime, chili, vinegar, garlic…


after marinating the beef, add broth and set in the oven



Then it gets slow cooked in the oven (next time I will use the crock pot) for a few hours and comes out tender and falling apart. Perfect.

shred the beef with two forks or lightly pulse with the dough blade of a cuisinart



I add the juice to the beef and serve it up with corn tortillas (pan-fried is really good), mashed avocados with lemon, salsa, cheese, tomatoes.
