Recipe: blueberry (and raspberry) streusel bars with lemon-cream filling

The summer solstice was a month ago. When the winter solstice passes, I watch the daylight hours increase with great interest. But when the summer solstice occurs, I don’t really notice the shortening of the days because it’s so hot that I cannot wait for the sun to drop behind the mountains each evening. However, when we wake up at 5 am and the sun isn’t popping over the horizon, I become keenly aware of the approaching equinox. I start to feel giddy and panicky at the same time. Giddy, because I relish those cooler days and panicky, because there is far more left on my summer todo list than there is time to do it all.

But that doesn’t keep a kid from trying.

Recipe: cindy’s molasses cookies

I have amazing welts developing on my knuckles and fingers. Those blasted mosquitoes were so desperate, they tried to suck my blood from my hands. But Jeremy and I suffered the heat, the bugs, the lightning, the rain, the unstable slopes with thousand foot drops to our deaths, and other beautiful things to capture a little bit of what we love – alpine summer. In photographs! Actually, I suffered all of that to capture the shots, and Jeremy endured it because he is the ace number one guy in the whole wide world. I’m only a third of the way through processing 600 shots, but have a looksee.

Recipe: bakewell tart

Just under the wire! I wasn’t sure if I was going to make it this month, but luckily it turned out to be a relatively straightforward challenge. Whew!

Here’s the official line: The June Daring Bakers’ challenge was hosted by Jasmine of Confessions of a Cardamom Addict and Annemarie of Ambrosia and Nectar. They chose a Traditional (UK) Bakewell Tart… er… pudding that was inspired by a rich baking history dating back to the 1800’s in England. And of course, the unofficial line is that our founders, Lis of La Mia Cucina and Ivonne of Cream Puffs in Venice, are goddesses. I marvel at how those two women do it, but they do it – and they do it well. Thanks for the pastry love, ladies!

This dessert was not only straightforward (thank goodness, or someone would have been pitching a fit at 8500 feet) it was delightfully almondy and moist with bright hints of fruit. I’ll have to be quick here before I nod off and wake up with little keyboard marks on the side of my face…
