Recipe: mini beer corn dogs

The weekend, she is here. Almost like clockwork, once foraging huckleberries is over for me, it’s time to move on to canning tomatoes. Over the past few years, I have discovered that the one thing I absolutely must can each summer is tomatoes. I won’t lose sleep if I don’t make peach, fig, or strawberry jam, but diced tomatoes are a must. At first I started with organic heirlooms and red slicers from Cure Organic Farm (a local Boulder farm – so great), but this year I’ve migrated over to the organic San Marzanos and Romas. They have a bumper crop of tomatoes right now and the seconds are $1.50 a pound. I picked up 19 pounds to can last weekend, and then I picked up another 25 pounds to can Thursday.

The sun is getting up later each morning, which I like. I like it a lot. It means fewer hours of that giant fiery ball of thermal radiation in the sky. Waking up before sunrise without feeling like puking is a wonderful feeling. And having night for more than a couple of hours before bed is good for greater productivity. The sky has been offering up some beautiful moments of late.

In Neva news, we used the halti collar for several days before i noticed the fur on her muzzle was thinning right where the halti rested. This made me very sad. Jeremy did some research and we decided to try a chest harness (a reader and some friends recommended them). Unlike the halti, the chest harness didn’t seem to bother Neva at all. We put it on her in the living room and she went about her business as usual. We walked her the next morning and she was so good (except with the squirrels – she cries and whines and barks when she sees squirrels). No struggling, no irritation. We were elated.

Lately I’ve seen mention of the Broncos in my Facebook feed. The Broncos are football, so that must mean it’s football season… Sportsball. Since we don’t have television, I wouldn’t know about any of the sporting seasons aside from the token sports discussions on NPR and those friends on Facebook who are sports fanatics. Even then, it’s quite easy for me to overlook it all because I’ve always found it far more desirable to play rather than watch. But I know that some people are far more enthusiastic about the football parties and party food than the football. So here’s a great appetizer for those sportsball gatherings if you’re looking for fun and quick recipes: the mini beer corn dog.

Recipe: mongolian beef

Labor Day weekend marks the close of the busy summer season. It’s when the visitors return to normal life and leave the mountains to the locals, as if the mountains have closed for the year. But the mountains don’t close, ever. They march through the seasons regardless of you or me. Despite the fact that summer is my least favorite of all the seasons (I love them all, I just love the others more), it is indeed a glorious time when trails are easy to access, wildflowers scatter across the hills, and the fruits of the earth spring forth. We hopped out to Crested Butte for the long holiday weekend so we could take care of house maintenance and get on the trails with the puppy. I also wanted to scope out what the aspens are up to because I’ve noticed yellows appearing earlier than usual in the Front Range – not big swaths, but patches here and there. Even though I won’t be doing a dedicated fall shoot this year (because of Neva), it’s hard to shut off the constant monitoring of the aspen stands right about now.

The weather on the Front Range had been mostly hot and dry the last few weeks and our trails had few signs of the mushrooms that graced them only a month prior. But Crested Butte was getting more consistent relief in the form of rain. When we arrived at our place, the lawn had big, healthy, (poisonous) mushrooms sprouting up. That was a good sign. My hope was that the chanterelles would have a second flush, but I wasn’t sure that it would actually happen. We hiked out to some patches over the weekend and lo and behold – chanterelles. Some were dried out and old, others were fresh and just coming out of the ground. I surmised that this wasn’t a second flush, but a continuation of the original flush – stoked on by healthy doses of rain and sun. What an amazing season it has been! I used all of the August chanterelles to shoot recipes, but these will be sautéed in butter and frozen for our enjoyment in winter.

Of course, the weekend wasn’t just about foraging mushrooms. We got Neva out on the trails for lots of exercise and visited the neighborhood lake to let her get her swim on. As we approached the water, she began to pull on the leash as if her life depended on it. At first I thought there was a dead, rotting carcass near the shore that she smelled. But soon it became clear that this dog wanted to SWIM. So we chucked stick after stick into the water and watched as this once chunky clumsy puppy now gracefully and athletically leapt into the water – a strong and beautiful swimmer.

I do plan to head up into the mountains for one last forage before returning home, but I realize that some of you may be tired of the onslaught of huckleberry and chanterelle recipes. Maybe you’re looking for something that will serve as part of a weeknight meal? I haven’t blogged too many Asian recipes this summer, so let’s change things up and go with some Mongolian beef. It’s an easy and straightforward stir fry. The only obstacle might be sourcing some of the ingredients, but I assure you that all of them can be found in an Asian grocery store or a regular grocery store that has a well-stocked Asian food aisle.

Recipe: corned beef hash

Several posts back, a reader (Jasmine) asked how I got started skiing. I wish I could say I began as a little toddler, the way these badass little Colorado munchkins do – but I didn’t. I spent my youth on the water, sailing with my dad and my sister. I didn’t begin the love affair with gliding on snow until I was 22 years old when I was visiting Jeremy’s family over the holidays and they took me to the bunny hill at their local mountain.

Jeremy is a phenomenal teacher when it comes to most things. Skiing is not one of those things. He learned to alpine ski as a kid, for crying out loud. The first thing he did was point down the hill and say, “Just head over there.” As soon as I began moving, I realized that he had neglected to tell me how to stop. I proceeded to crash into the ground while making a mental note not to listen to that guy. Despite the terrible first lesson, I really loved skiing. Living in Southern California, we managed to get 5-8 days a year if we were lucky.

Then we moved to Ithaca, New York where we picked up cross country skiing (it’s free and we were graduate students). We continued logging single digit alpine days each year whenever we visited family in New Mexico. Upon our return to Southern California, we would spend a couple of weekends each year skiing at Mammoth Mountain. This was the first time I had seen a person telemark ski. I was riding solo on the lift watching this fellow carve graceful turns down the mountain such that I missed getting off the chair and had to do the “jump off and roll out of the way” move. But it was worth it.

We learned to telemark ski (with proper instruction) during our first winter in Colorado, ten years ago, and I’ve never touched a pair of alpine skis since. Being locals, skiing is no longer limited to vacations or weekends – it’s something we do for regular exercise during our snow months… September through June if we’re lucky! We ski the resorts, the backcountry, the local trails, the nordic centers: telemark, ski touring (skins and scales), classic, and most recently skate skiing. I love skiing. It kept me sane during my chemotherapy in 2008 and it keeps me happy and healthy now. So that’s the love affair in a nutshell!

Right, but enough about skiing (we still have a few more months to talk about skiing). If you are serving corned beef for Saint Patrick’s Day or just because they happen to be on sale EVERYWHERE, you might be fortunate enough to have some left over. I am actually far more excited about leftover corned beef than the corned beef itself. We ate a couple of slices of corned beef with roasted vegetables, but I already had plans for the leftovers which were actually 90% of the brisket. We enjoyed delicious reuben sandwiches with melty swiss cheese and loads of sauerkraut, and then I made corned beef hash – because I’m a savory breakfast kind of girl and this is filled with ALL OF THE GOOD THINGS.
