Recipe: chicken fried steak biscuits with chanterelle gravy

We dropped Neva off at the vet’s Monday morning for her spaying appointment, leaving my mobile as the contact number. I got a call a few hours later reporting that her surgery went well and that we’d be able to pick her up that afternoon when the drugs wore off. When we walked into the office to get her, she was chilling out behind the front desk with Aspen, a gorgeous, giant white wolf-like dog who weighs about 100 pounds. Actually, I recall that Aspen is 1/4 wolf, but he is all sweetheart, playing ever so gently with Neva. They were super tight buddies.

Neva seemed practically normal, but Jeremy didn’t want her jumping and possibly tearing her stitches. So he put all manner of items on the couch to deter her from trying. I watched as Neva walked up to the plastic bins on the couch, stepped to the side, and nimbly jumped over the armrest, then curled up in her favorite corner of the couch. Oh little pup… We marveled at her incision, which was nary an inch long. Back in the day, Kaweah’s incision was supposed to be 4 inches long, but was more like 5 inches (we’re guessing because it was at the Vet School) and took forever to heal. But Neva is on a fast road to recovery and we’ll be hitting the trails again in no time.

Summer just can’t seem to let go over here. It gets downright hot in the afternoons, so I still give Neva a large ice cube around 3 o’clock to play with, roll on, and eventually eat. Thankfully it is getting chillier overnight, so we can cool the house enough to be comfortable. I like the crisp cold in the mornings. Not cold enough to be punishing like in winter, but cold enough to not mind letting Neva up on the bed to cuddle for another ten minutes before she starts licking my hair.

Seeing as the weekend is coming up, I need to share this recipe for fans of the savory weekend breakfast – chicken fried steak biscuits with chanterelle cream gravy. Feel free to use other mushrooms if you can’t get chanterelles or don’t want to get too spendy. However, if you CAN get chanterelles, please do. They transform the basic cream gravy into the realm of transcendence.

Recipe: chanterelle bacon corn chowder

I want to thank all of the folks who shared advice on puppy pukiness on car rides. We gave Neva a ginger chew 30 minutes before driving to Crested Butte last weekend and she puked about 20 minutes into the drive. I’ve become an expert at catching her puke in a plastic grocery bag, but sometimes she pulls away at the last minute and so I’ve also developed expertise at cleaning up puppy vomit. Our next step is to try dramamine per our vet’s instructions. On the drive back home, Neva kept it together until we neared Cottonwood Pass (the dirt road up is curvy and bumpy), but that time I caught it all in a bag! Once at the pass, we decided to take her out for a little hike, which made her VERY happy.

Neva is about five and a half months old now and we suspect she’s entering that adolescent stage. She walks nicely on the leash when she feels like it, but when she wants to run around with Snickers (a little chihuahua-doberman mix) or anything else, she pulls like a maniac. So I got out Kaweah’s old Halti collar, also known as the gentle leader. It’s supposed to reduce pulling and render your dog obedient without hurting them, but most dogs I know really dislike it until they get used to the collar. Kaweah would melt when we put it on her. My in-laws’ dog merely sees the Halti in the room and he settles down. Kaweah’s Halti was big on Neva, so she was able to wriggle out of it a few times (Jeremy bought a smaller size after work today). We used to think Neva would surpass Kaweah’s weight and size, but now it’s looking that she will be the same size or smaller than Kaweah. Eventually, it appeared to work and we were able to walk peacefully, until Snickers came by…

This week marks the end of foraging for me. I’m done with the chanterelles and the huckleberries – or rather, they’re done. It feels good to be able to hike normally again without constantly scanning the ground and stumbling forward tripping over rocks and tree roots. My favorite part is the hunt. I love finding mushrooms and hucks. My next favorite part is the photography. I like shooting the pretty specimens I encounter. Then there is the actual collection which can be backbreaking and/or dirty work. My least favorite part of the whole process is cleaning the mushrooms (sorting hucks can be a lot of work, too). So when the season ends, I’m sad but I’m also glad.

When September rolls around I find myself in the mood for some kind of corn chowder before the wonderfully sweet local corn is done for the year. Seeing as I had some chanterelles, it made sense to have the two ingredients share the stage. And then there’s bacon…

Recipe: chanterelle galette

Jeremy told me that he thinks we may have seen the last of the hottest days of the year. I hope this is true. All signs are pointing to fall in the mountains: cooler nights, tiny spots of yellow leaves emerging in the sea of green aspen stands, huckleberry leaves turning red, and the sun crossing the sky with a lower profile than before.

Neva currently weighs in at 30 pounds for her 5 months of age. Her growth has slowed a little and it looks like she may wind up being a smaller dog, like Kaweah. She continues to lose her baby teeth, but still acts like a baby dog from time to time. Best of all, our pup has begun to mellow out in the evenings, resting at my feet or Jeremy’s feet when we work at our computers or curling up next to us on the couch. I look back at her puppy pictures and I can barely recognize her – that chunky chubby puppy has turned into a lanky teenager. We are starting to settle into a routine which makes all of us happier. We’ll get there someday.

After a big hot and dry spell, we’ve received a few rainstorms. These days I think of the rains in terms of huckleberries. A pulse of rain, lots of sunshine, more rain, more sun. That’s what the hucks like. As long as it doesn’t get too cold too soon in the high country, they could keep going for a few more weeks. But rain also makes me ponder what the mushrooms will do. If there is enough rain, we could see another flush of porcini or chanterelles. It could happen! Meanwhile, I have spent the past couple of weeks putting my chanterelle haul into delectable recipes to share with you good people. Today we’re going to go with a galette, because it’s not a terribly finicky pastry and it tastes amazing. Don’t fret if you can’t find chanterelles, use some other mushroom that you do have access to. Crimini works, is easy to find in most markets, and won’t break the bank.
