Recipe: grilled tequila lime shrimp

The mountains are calling and so we must answer. Will tell them you said hello. According to several reports, it should be outstanding. I love taking road trips with Jeremy. Still have to pack my gear…

this time last year

Kaweah is going to Camp Crazy where the staff give her extra pats and belly rubs. They let her sprawl out in the kiddie pool in summer and curl up on the warm, fresh laundry in winter. Plus she gets to play with all of the other pups. It’s less stressful for all involved.

So while I need to finish some final prep, I thought I’d toss out a recipe that we tried last night for dinner. I’ve been in the mode of using up ingredients I have on hand – basically cleaning out the freezer, the pantry, and now, the booze cabinets. Don’t be fooled, we’re not heavy boozers. The cabinets I keep my booze in (mostly for desserts) are small, hence cabinets instead of cabinet.

where is this going… lime, shrimp, tequila, garlic, olive oil, spices

I have a nearly full bottle of tequila because we offered margaritas at a party a while back. We also offered gin and tonics. Everyone wanted a g&t. The plan was to make some manner of grilled shrimp with a lime juice marinade, but then I found recipes that called for tequila and lime juice. I quite love booze in my food.

mix it all in a ziploc bag

Recipe: chocolate chunk bundt cake

yup, this one

Talk about superconnected. That would be Andrew. I feel like a mountain hermit as it is, but hanging out with Andrew makes me feel like I’m visiting Boulder… from Mars. We met for lunch at The Kitchen yesterday and indulged in some good conversation over awesome salads. It’s always a struggle for me to figure out whether to go with what I love or try something new. You ever have that problem at a restaurant? I went with what I knew – the poached salmon salad – since I felt risk-averse (read: tired).

Recipe: margarita jello

At the party we threw last weekend I was all prepared to serve up margaritas to our guests because that sounded like a good way to wash down those shredded beef and carne adovada tacos. As luck would have it, only one person asked for a margarita and so I was stuck with a bag of limes after the party was over.

what to do with juicy limes…

I shouldn’t say stuck with the limes, because there’s always something good to make with limes. I should say stuck with tequila because neither of us drinks tequila. Then I recalled a mojito jello that Helen had posted last summer and wondered if I might try something similar with the margarita. I had a good recipe in hand after researching all over the web for the *best* margarita cocktail. It goes something like 2 parts 100% agave tequila (silver, I don’t know what silver means, but basically don’t buy shitty tequila), 1 part Grand Marnier, and 1 part fresh lime juice. I guess I’m a serious lightweight because that was kinda strong for me. I preferred it with simple syrup, more lime juice, less booze.

sprinkle gelatin over the water to soften

fresh squozen is best
