Recipe: quinoa with sautéed mushrooms and kale

Planning my schedules is easy. Planning my schedules around other people’s schedules is where I start wanting to tear my hair out. Last week it got to the point of maximum chaos trying to coordinate several travel shoots. I even thought I was going to have to dig around for someone to come with me to Hawai’i! But just as things seemed impossible to nail down, I did manage to get it all settled in time for the weekend.

There is a lot going on around here and this past weekend was no exception. For example, there was PodCamp Boulder 3 – the Unconference. I attended PCB2 last year and it was tremendous. There is a lot of knowledge in this community – a lot of sharing, discussion, creativity, laughter, networking, and good people. I love that. I came away with some new friends and more ideas to mull over in my head.

And because Kathya was at PodCamp too, we ventured into downtown Boulder to try out a new eatery for lunch. I went on my friend Denise‘s recommendation. Pizzeria Locale had been open for just over a week and it sounded fabulous. I’ll be writing more about them soon.

Since last week was Chinese New Year, I kinda loaded the Chinese recipes (or Chinese-related posts) on you. We’re back to mixing things up here, which brings me to quinoa. Jeremy and I are quite fond of quinoa, but I haven’t cooked with it all that much. Mostly, we have had it in restaurants. I was reminded of how much I enjoy it when Danny whipped up some lovely quinoa with chanterelles, summer corn, and peppers for breakfast one morning when I was visiting with him, Shauna, and Lu.

I purchase my organic quinoa in bulk from Whole Foods. There is also a red quinoa that I wanted to try, but the bin was EMPTY. I settled for white quinoa. I’ve heard people say that you can treat quinoa like you would rice. It’s lighter than rice and the texture is more springy. There is a nutty flavor to the quinoa which works beautifully with vegetables. I chose to cook it with some kale, onions, and mushrooms.

Recipe: chinese salt and pepper squid

I made a new friend last week. Despite being around him for the past several months, the reason he’s my new friend is because he was only just born a few weeks ago. Erin and I went to visit with our friends – the proud new parents – and with little Felix. He’s a charmer and I am obsessed with his little feet. There was much discussion of how to craft some telemark skis for him.

The past week we’ve spent more time on trails than at the big resorts because we are spoiled brats who don’t like skiing with crowds of holiday or weekend skiers. Plus, there is something to be said for the beauty and solitude of our local backcountry. I know some of you will think skiing is skiing, but there are many flavors of skiing. I call this one “delayed gratification”. But really, it’s great exercise and a lot of fun.

As some of my friends know, I had lost my Chinese cooking mojo for a while. I just wasn’t feeling it. Sure I could think of things to make, but I had no desire, no spark to actually want to make any of them. Then in the last few weeks, I’ve developed cravings for various Chinese dishes that I’ve only had in restaurants. Perhaps it is because Chinese New Year is just around the corner (next month) or because I’ll be seeing my beloved Chinese Grandma on my next trip to the Bay Area? Whatever the reason, I began scouring my Chinese cookbooks for a favorite recipe I had been wanting to learn to make for years: salt and pepper squid.

Recipe: chinese stir-fried scallops

That cool down was a lie. It cooled down for all of one day and then it flipped back to summer. Nature is a fickle lover and so it is that I am waiting for and chasing and waiting for and chasing her fall colors. She flirts and teases and disappoints. Right when I think I have had enough, she flaunts a little more and entices me to chase again. And I can’t help it, because I am so in love with her.

Nature photographers and lay persons have very different standards for what a good leaf show is, or so we found out from all of the locals’ reports. The average leaf-peeper passes miles of forest taking it all in without commitment to any of the colors, the light, the trees, the landscape. It’s purely passive. They don’t crawl around looking, thinking, analyzing, choosing, gaining intimate knowledge of the surroundings. Jeremy has asked me if photography has ruined my enjoyment of the outdoors. Yes and no, but mostly no. It’s a heightened sense of what is there, much the way becoming a connoisseur of fine foods might enhance your appreciation for food. But in addition to that soaring joy of getting the shot when the light and the land and the planets align, I can actively back away from shooting and love the mountains and forests for what they are. Because ultimately, this is about love and passion – the fire in my belly.

My friend Shauna is always talking about joy in the belly because that’s what she and Danny bring to people. They are pretty amazing at it too. Me? I’m more about joy in the heart because I like FIRE in my belly. That’s right. Figuratively speaking, it is what drives me to do what I do. When Jeremy’s stomach is feeling unsettled, he seeks dairy to soothe it (uh, that would be disastrous for my lactose intolerant self). When my stomach is unhappy, I look for spicy foods to make me feel better. I’m the one who wakes up in the morning craving kimchi, jalapeno potato chips (Tim’s Cascade are Diane’s and my favorite brand), or salsa. So when I tried this recipe for Chinese stir-fried scallops, mine was of the fiery persuasion.
