Recipe: pumpkin peanut butter dog treats

Dogs have such great attitudes. They’re always happy, always hopeful, always up for anything. Maybe not ALL dogs, but most dogs – especially the ones I meet on the trail or at the beach or basically anyplace outside. We have one of those happy, hopeful pups. I swear she makes every day that much better with her wagging tail, sweet disposition, and general goofiness.

People often ask what we feed Kaweah, because she has a shiny, healthy coat. Iams. We used to feed her regular Iams, but now she’s on Iams for “mature” dogs. However, her dog food doesn’t make her coat shiny. Genetics makes her coat shiny. Kaweah comes from good stock and we see that more and more as she ages. She’s been a healthy dog for her 13+ years. It helps that she’s got great muscle tone and isn’t overweight. Of course, given her druthers, Kaweah would eat 24/7. The act of eating a treat (or anything for that matter) is probably Kaweah’s favorite activity. So we try to maximize the joy by giving her little treats. She’s not smart enough to realize that five little treats are less than five giant treats.

Store-bought dog treats are not inexpensive, so I started making treats for Kaweah at home. The good news is that they are way cheaper than store-bought treats and really easy to make. The better news is that she loves loves loves these treats.

Recipe: chocolate mochi cake

Easter is coming. (If I were a Stark, I’d say, “Winter is coming.”) Working with artisan Robin Chocolates these past few weeks, I feel as if it has been Easter for a while. I’ve had hand-crafted marshmallow-almond butter chocolate bunnies, bunny sugar cookies, chocolate ducks, marshmallow peanut butter bears, peanut butter crisp chocolate eggs, caramel turtles, and assorted (amazing) truffles marching past my camera and into my (or rather, Jeremy’s) belly.

You can stop by Robin’s storefront in Longmont (Monday-Saturday 12:00 pm – 6:30 pm) for a free sample while you pick out your gorgeous Easter goodies for the sweet-toothed loved ones in your life (or yourself, ahem…). Normal began to lose all meaning for me until this week when a storm front drifted in and dumped several inches of snow in my yard, on my house, on the trees, in the mountains – everywhere. I know a lot of people in Seattle, Washington and Ithaca, New York who become noticeably depressed or cranky when they haven’t seen the sun in a couple of weeks. I get that, I think. I’m the opposite. I need my snow and in summer, I’ll settle for rain (rain is good). As soon as Jeremy got home on Tuesday, I shoved his ski pants at him and said, “We’re taking Kaweah for a ski.” It had snowed all day and five minutes before he walked through the front door, the sun came shining through.

Kaweah ran her little brains out, she was so happy. We were elated to be out there alone, in the still and quiet of the woods, blanketed in white. Cold air feels good when your face is flushed bright red from exercise. I don’t know if we’ll get any more snowfall. I hope we do for recreation, yes, but especially to mitigate wildfires this summer and fall. Once home, we both dug into some chocolate mochi cake I had made, to tide us over while we cooked dinner. I know I’ve said I’m not a fan of chocolate, but I do love 1) a little bit of good quality dark chocolate and now 2) chocolate mochi.

My friend Fran, a native of Hilo, Hawai’i, sent me a link to a recipe for chocolate mochi cake last year, but I lost it. I began to google about for it recently and came upon a recipe from the Polynesian Cultural Center website. Having made complicated pastries and confections in the past, a recipe that calls for mixing everything in one bowl and dumping it into a pan to bake sounds like heaven to me. This is heaven. Now, the original recipe calls for margarine and well… you know we’re using butter instead of margarine. It’s worth stating (again): glutinous rice flour does not contain gluten. This is totally gluten-free friendly.

Recipe: roasted chickpeas

We’re in the middle of some crazy heat wave over here. 70s on the flats, 50s in the mountains. Snow can’t survive that kind of weather for long and I’m hoping for the cold to return so that we might enjoy more than a meager month’s worth of proper winter (that was February). But this warm spell is certainly conducive to the whole “Spring is coming” mantra. To be honest, it’s pretty great weather for getting together with friends. My pal, Kat, had her birthday on Monday, so I hosted her for a few days at my house in the mountains. Jeremy and I treated Kat to Community Night at The Kitchen, which really is the absolute best dinner deal in Boulder if you love good food (and who doesn’t?). If you haven’t been before, I implore you to put that one on your list of things to do.

Oh, that was a wonderful evening, but the celebration continued with lunch at Sushi Tora, buying some wines, and hitting up a few of our favorite places around town like Cured, Boxcar Coffee Roasters, Whole Foods on Pearl (not all Whole Foods are equal – our Boulder store on Pearl is beyond amazing, truly).

Last night, Jeremy and I changed the sheets and towels in the guest room for our next visitor who arrives this evening. It’s definitely less stressful having friends over when the weather isn’t freezing cold, the winds aren’t trying to blow your house down, and the roads aren’t covered in a slick of ice and snow. Spring and summer entertaining in the mountains is easy, fun, and relaxed. It puts me in the mood for appetizers, snacks, and party foods.

Some time last year, I saw roasted chickpeas making the rounds on blogs. Friends raved about them. They were a healthy, crunchy snack that could be sweet or savory. I decided to try Kalyn’s version because the Moroccan spices appealed to my savory cravings. This was back in the day, before I was gifted my precious pressure cooker. I used canned chickpeas back then. Today I cook dried chickpeas in the pressure cooker (and they’re awesome).
