Recipe: green chile bacon egg bake

At last, the cookies are done and gone. If ever I entertain the thought of baking for a living, I need only remember the days of intensive baking in December that make me hate all cookies and chocolate. So why do I keep doing it? Jeremy asked this of me in the car as we drove down the canyon this morning on our way to deliver the cookies. When we started several years ago, it was because buying gifts for his administrative staff wasn’t really in our budget. But each year people loved the homemade cookies and candies so much that it seemed like a cop out to consider buying gifts as opposed to making something from the heart. I suppose I loathe shopping far more than dealing with tempering chocolate. Even now, mere hours after hand delivering the holiday goodies and shipping packages out to some special recipients, the sore back and lack of sleep are but a faded memory. I think as long as I can get outside for a little exercise during the mad frenzy, I can deal with it. After a week with this lingering low-level non-cold, I decided to beat it out of my body by going skate skiing. That felt terrible, but afterward, I felt SO MUCH BETTER.

Now with the cookies out of the way, I can concentrate on what needs to get done in the next couple of weeks. Part of that includes menu planning in Crested Butte because we don’t have access to as many ingredients out there as we do in the Front Range near Boulder/Denver. But honestly, when we are in Crested Butte, I try to avoid involved baking and cooking projects because the whole reason for being in CB is to be outside in all that gorgeousness, not inside in the kitchen. With houseguests coming at the start of the new year, I thought about simple and satisfying things to serve for breakfast. One recipe I settled on was an egg casserole loaded with bacon, green chiles, and cheddar cheese – something quick to whip up before you hit the mountain or the nordic trails!

Recipe: old fashioned doughnuts

We piled ourselves, the dog, and eight pairs of skis into the car over the weekend and made our way south and west to Crested Butte. I patted myself on the back too soon for catching Neva’s puke episode in a strategically placed plastic bag, because when we stopped for gas in Buena Vista, she threw up again – down the back of the driver’s seat and on her doggy bed. Then when we opened the door to get her out of the car, she projectile vomited all over the door and on Jeremy’s shoes and pants. But we did eventually get to Crested Butte and we were all very happy for it. We gave Neva lots of treats and snuggles and warm blankets for her to curl up in, and I googled how to clean vomit from car upholstery.

Here in Crested Butte, Jeremy and I just want to hole up with our pup so we can ski and work in peace for the week. As usual, we have no grand plans for a Thanksgiving-style feast. We like to keep things simple and low-stress in general, but especially over the holidays. The only thing that will make an appearance from a typical Thanksgiving menu will be mashed potatoes. We’re grilling steaks because 1) they taste better and 2) they are quick and easy. And I plan to roast lots of vegetables because honestly, that green bean casserole (I don’t care HOW fresh you make it) is disgusting. The argument “This is how we’ve always done it,” doesn’t sit well with me. That line has gotten humans into a lot of trouble through the years… including overeating at Thanksgiving.

I try to approach life from a more pragmatic perspective. Traditions that I used to blindly follow now come under heavy scrutiny. Does it cause anyone harm? Is it a source of unnecessary stress? Is it a stupid waste of money or time? Is it just plain stupid? The only part of this holiday that I do really like is the reminder to give thanks and to remember (i.e. help) those who are less fortunate. If you don’t know what you are thankful for, perhaps take some quiet moments – step away from your phone, no really – and mull that one over. It’s important and it’s good for you.

What might not be so good for you are these old fashioned doughnuts. But they’re awfully tasty and no one said you had to eat all of them. Just have one… or two… or… Old fashioned doughnuts rank right up there with French crullers for me. I read several recipes and was surprised to find the doughnuts were so easy to make! Except for me, they weren’t easy at all. My first attempt was a bit of a disaster and I spent several days troubleshooting and researching, which led me to this 1940 research paper on deep-fat frying at altitude. Turns out if you live at or near sea level, you’re golden. Follow the recipe as is. If you live at elevation – let’s say above 5,000 feet – you might want to make a few adjustments which I list in parentheses in the recipe below. The photos in this post are from the first batch, but the final photos are of the second batch.

Recipe: morning buns

Hey, I didn’t need to wash my car because it RAINED all day Wednesday! What does that say about me when my car is cleaner on a rainy day than a sunny day? Don’t answer that. Even better than the rain, was the snow falling at my house! It was too warm for any of it to stick, but the sentiment was there, and I’m pretty sure those clouds hugging the mountains will clear out eventually to reveal REAL SNOW on the high peaks. This is good. A month later than I prefer, but it’s still good.

As we shifted from cloudless, sunny, warm days to this cloudy, rainy, cold weather, the in-between was rather wonderful. A couple of mornings in a row granted us the right conditions for some impressive light shows, where sun and clouds and rain work together for a greater good. Of course, I was awake and alert well before the first faded rosy glow in the east appeared – because Neva stepped on my stomach at 5 am to snuggle down in the space between the two humans. From then on, it’s fitful sleep for me, so why not just get up and get to work? Thanks to Neva, I found chanterelles this summer and I have caught a lot of great sunrises.

Earlier this week, Jeremy gave a lecture (A Tour of the History of the Universe) at the Chautauqua Community House in Boulder, hosted by the Colorado Chautauqua Association. It was a great talk and the sold out crowd loved it, asking several thoughtful and engaging questions afterward. I mean, who doesn’t love talking about black holes, dark matter, dark energy, the big bang, and where our universe is headed? Jeremy works hard when he has to speak in public, because he’s a bona fide introvert. I know a lot of people who claim to be introverts who aren’t actually introverts. In fact, most of the true introverts I know never say one way or the other because they don’t want to draw attention to themselves and because the extroverts never shut up (I’m an extrovert, by the way).

As you can imagine, after his talk Jeremy was completely exhausted. He spent the entire day on telecon, teaching class, attending his student’s oral exam, and then giving this lecture well into the night. He didn’t eat beforehand because he didn’t want to puke during the talk, so we had a very late dinner and then it was to bed so we could prepare ourselves for Neva’s early morning wake up leap. But in the morning, I did have some delightful homemade pastries on the counter for him while I rushed out the door, pajamas under my jacket, to shoot sunrise. The day is infinitely better when you start it with pastries. I am particularly fond of the aptly named morning buns.
