Recipe: chicken congee

Is everyone back into the groove now? Holidays are over and all of the new calendars are up for 2012. I’m chomping at the bit to get this party started: things to do, places to go, people to see. There’s been more emphasis on the first two, but hopefully I’ll remedy the third one this week. I’ve been getting my physical and digital houses in order here (still not done, not by a long shot). How did the weekend treat you guys? Mine went a little like this:

It’s a bit of a haul from our house to the new (well, new to me) Ikea in Centennial, Colorado – just under 90 minutes. But hey, that’s better than a 9-hour drive to Salt Lake City, Utah. I think of Ikea as the OCD adult amusement park. They even provide sofas, beds, and a restaurant because you’re basically going to be there long enough for your body to require sustenance and rest as you try to find your way out of the store. If it sounds like I hate Ikea, I do not. It’s just that I am occasionally distracted from our seek and destroy shopping mission. Jeremy will have to come and fetch me from the children’s section or he’ll find me standing mesmerized in front of the colorful lamps and lights. And if the “we’re only going to be there for an hour or two”-trip-turned-7-hour-adventure wasn’t enough, you get to spend as much time assembling everything when you get home. But now we have clever Swedish storage for all of our junk!

Mmmm noodles. I am a noodle girl. Every now and again I’ll wonder if I’m a rice girl, but no – I am true to the noodle. That doesn’t mean I don’t enjoy my rice. Now that we’re acting like winter again, it’s the perfect time to be making congee, jook, or xi fan – Chinese rice porridge. I like my mom’s chicken congee.

My parents used to make congee on the weekends for breakfast when I was growing up. It is a savory porridge which might explain why I have never been a huge fan of sweet breakfasts. In college, I’d make the basic rice porridge when I wasn’t feeling well because it was neutral and settled my stomach. These days I make my mom’s chicken congee because I love the ginger. I called them up last week to verify the recipe in my head with the recipe in their heads.

Mom is so cute when I tell her I have a question about a recipe. She’s eager to help out and to make sure I do it right. Thing is, when they see that it’s me calling, they put me on speaker phone. So as soon as Mom starts to share her method, Dad butts in and says, “Let me tell you how to do it the right way…” See, Dad is just as eager to explain how he does it. It happens practically every time and I try my hardest not to laugh, but it’s really entertaining and a little insane to get a recipe from them. Most of my recipes are a marriage of the two versions and I think that’s a good thing. Whenever I eat these family foods, I feel a little tug in my heart.

Recipe: albóndigas soup

With the arrival of each new month, I have a little routine of running through the house flipping all of our calendars. We have several calendars just like we have several clocks, because I’m all time-conscious. I could have sworn it was just yesterday that I flipped to November. Is this what happens when you get old?! December is going to be a good month, because I say so. We already have an inch of highly-anticipated snow on the deck as I type. I am hoping December will make up for what November was lacking in blessed frozen precipitation. And then I have my schedule of handmade gifts for those people that have been very good to us like Kaweah’s Camp Crazy, our Subaru service team, the local post office (yes, even the ornery employee), Jeremy’s administrative staff, our vets, and my oncologist (the best one in the whole wide world). It just so happens that we’ll have new toys of our own to break in this month.

While I’m ridiculously excited to have all of this new gear, I’m also grateful that we only upgrade our skis every four to five years because we’re having bread and water for the next 12 months. Actually, it’s been 13 years since we upgraded our waxless touring skis and let me just say, technology can be a beautiful thing when you wait a decade.

So earlier this week I was sitting at my desk one morning, typing emails in a horrible posture when Jeremy said, “Come look at these birds in the yard!” I jumped up from my seat and *twang*. My back has been recovering rather quickly. Although it feels slow as hell to me, I recognize that going from being unable to stand to being able to ride my bike in 48 hours is definite improvement. This has happened before in the past, so I know what works. Ice is my friend. Say it with me, everyone. I ice my back a couple of times a day, lying with my back on the floor, legs bent at 90 degrees and calves resting on a chair. I lay a quilt and pillow on the floor, then go to the freezer to get my ice pack. And without fail, upon my return there is a little occupy movement going on. Every. Single. Time.

I make her move, but only enough for me to lie down next to her. Kaweah loves it when people get on the floor because she thinks they’re going to play. We had to establish that there was no playing going on while I iced my back. She settles for resting her head on my stomach and cuddling, periodically raising her head and sniffing around to check for treats (I know, she’s crazy – she is food obsessed 24/7). She’s become incredibly sweet in her old age.

We are having a lot of soups and stews in this house and it is without a doubt very absolutely awesome amazing. I load them with vegetables, they serve us for several meals, and the cooking warms the house with wonderful savory aromas. I had a batch of navy bean soup on the stove this evening as the sun dropped below the Continental Divide. There were nice clouds that I expected to light up on the bellies, but they were duds – gray, lifeless. I stood at the windows tapping my foot on the ground and scrunched my mouth to one side. Back to the soup… But you know, there is a reward for patience. Most of the time, it is a fizzle, but I kept checking every 20 minutes and after nearly an hour past local sunset, I started to see a yellow glow. This was a good sign. I took my photo equipment out onto the deck. I set up my gear while watching pale yellows become golds which touched off oranges, pinks, and reds that painted these textured cloudscapes. Kaweah ambled about the deck checking the grill for any overlooked goodies. The clouds were not high, they hugged the horizon but stretched from east to west (as far as I could see). Even though most people think they need a wide angle lens to capture something big, I find I use my telephoto zoom as much as my wides if not more so.

Now back to the soups. I’ve had this one in a couple of Mexican restaurants when I lived in Southern California. It was a simple meatball soup, albóndigas soup. Usually the broth was thin and there were swirls of cabbage, carrot, and onion floating about with a grain of rice here and there alongside three small meatballs. I found it comforting despite how plain it was and how cheaply it was made. I didn’t know it was cheaply made, I just thought they were all this way. At some point my mother-in-law gifted me this terrific New Mexican cookbook – The Border Cookbook, which I didn’t really cook from until my in-laws moved from New Mexico to Colorado and my supply of good New Mexican fare was cut off. When we moved to Colorado, I began to tag recipes until the book looked like it was growing a thick lawn of bright pink post-it tabs out the top. I had albóndigas soup marked forever and I finally made it this week.

Recipe: crunchy granola

[There really is a recipe buried at the bottom of the post, but first I’m going to yammer about my Seattle visit… because it’s my blog and because I get to do whatever I want with it.]

You knew we were *this* close to moving to Washington (state), didn’t you? In 2004, Jeremy and I had a map of the country in front of us and we had narrowed it down to two places: Colorado and Washington. Obviously Colorado won, but it was a choice between awesome and amazing. We are incredibly happy with where we are now, but we have a bit of a love affair with Washington – especially Seattle. In fact, it’s becoming worse because of all the friends we have there. We almost have to sneak into the state for fear of hurting feelings. Perhaps this wouldn’t be such a problem if we didn’t insist on time in the backcountry, but that’s a priority for both of us – time alone (together) in the wilderness.

Our flight landed and we made a slow bumble beeline for the ferry to Vashon Island (is it me or is SEATAC really slow about… everything?). For me, Vashon is synonymous with Shauna and her dear family. They had invited us to their lovely island home for lunch and to make a pie for Mikey. It dawned on me that there is never enough time to spend with any of the people we care about, especially the ones far away. Life is a balance between those things we should do, those things we want to do, long term, short term, good, and bad. Everything had been go! go! go! up to this point. I stood in their living room watching Lucy play, listening to Shauna share the latest, thinking about our friend. It can be overwhelming how life is filled with both joy and sorrow – to such extremes and all at once. I closed my eyes and quietly choked back the emotions welling in my chest.

If you follow my tweets, you’ll know that Jeremy was utterly delighted with the ferries (partly for special relativity teaching moments). This New Mexico boy is smitten with the ocean. When he sees it he gets all giddy and says, “The ocean!” and I’m all “Yeah, there it is.” I grew up on the water and I do love non-tropical coasts, but I don’t have the same feelings for the water the way I do for the mountains. Still, it’s wonderful how Jeremy becomes a little kid on or near the water. A little kid with an astrophysicist’s brain, that is. A good fraction of our outdoor conversations revolve around the laws of physics that dictate curious and interesting natural phenomena. I knew a woman in graduate school who once said that she felt learning how things form makes them less amazing to her. I feel the complete opposite. (I should add that my opinion of her plummeted after that comment.)

Whatever.

Back on the mainland, we gathered our food for our backpack. In summer, for trips shorter than four days we like to go no-cook which means no stove. That’s particularly handy when you are flying because airlines really get their panties in a wad over Whisperlite stoves and empty fuel canisters. It’s easier to leave them at home or borrow from a friend. One of my favorite things to bring are savory croissants (spinach & feta, ham & cheese, vegetable) from good bakeries. Shauna sent us to Bakery Nouveau near the ferry terminal in West Seattle. Highly recommended, people!

I took Jeremy to Delancey for dinner with Tea. It is considered a must visit and this was the only night we had available to dine there. Good food and great company – it’s these simple things that make my days.

We got quick hugs and hellos with Molly and Brandon, and Brandi was so sweet to bring us around back to The Pantry to have a peek. Less than six months ago I saw the start of demolition and now it has transformed into a most beautiful space and place.

The next three days were spent noodling about in the backcountry of Olympic National Park. A splendid jaunt and much needed calorie-burner for all of the noshing we had done (and would continue to do) in Seattle! One thing we learned when it comes to ferries… it helps to not be in a rush like the rude stressball from Illinois who cut us off in line but still didn’t make the boat. We took advantage of the downtime to dry out the tent and our (really smelly) socks.

We arrived in Seattle with enough time to clean up at our dear friends’ house and take them out for dinner at Staple and Fancy. The group opted for the four course family style supper which I know for a fact feeds twice as many people as you have at your table. Let’s see if I can remember… First course: bread, buttery green olives, crostini with smoked halibut, anchovies on boiled eggs, burrata with eggplant, pork terrine, fried oysters, salmon belly crudo with sea beans. We were feeling pretty full, but wait! There were three more courses! Second course: tagliatelle with arugula pesto and shaved tuna heart, cod brandade ravioli. Third course: whole branzino with fingerling potatoes and olives, roasted half chicken with slow roasted tomatoes and sweet peppers. Fourth course: cheesecake with fresh figs, chocolate and caramel pudding with truffle cookie. It was all very well done.

Someone had to roll me down the street, into the car, out of the car, and into bed. But by morning, Jeremy and I were ready for a nice stroll around Queen Anne to sample some Top Pot doughnuts, visit Macrina Bakery, and wander through Trader Joe’s (because we like to torture ourselves like that). I should mention that the weather during our entire trip was perfect: mostly sunny, cool, and not too humid for Seattle. We met up with Lara for lunch at Sitka & Spruce, a place I had wanted to take Jeremy ever since I dined there on my last visit in March. The food is something else… something exceptional. That evening we attended a potluck that Dana so graciously offered to host as there were many people to see in Seattle (far too many to fit even in Dana’s wonderfully large and gorgeous home). I felt sheepish. I didn’t want a party for ME. I’m usually the one who throws the party (or helps throw a party) for someone else. I kept telling myself that it was for everyone else too. My non food blogging and food blogging worlds collided in an explosion of laughter, raunchy talk (that was most certainly the food blogger contingent), amazing food (my non blogging friends are great cooks too!), stories, and the three most well-behaved little boys this side of the Mississippi. It was a fun way to wrap up our trip.

So it’s about time I gave you a recipe as I’ve been delinquent for most of August. And it’s only fitting that in my discussion of Seattle and Boulder, I bring you crunchy granola. Get it?! Ha ha ha! Okay, if you don’t get it, I’m not explaining it. I love eating homemade granola, but never thought to make it myself. That’s the great thing about food bloggers – they (the ones I like) make EVERYTHING from scratch which means I really had no excuse for not making my own granola. The only decision to be made was what to put in it.
