Recipe: apple cider pancakes

It’s just me here now. Well, me and Kaweah. Jeremy is back home for work-related obligations, my photog pals have split in different directions because in truth, the fall foliage is sucking this year. I’m still hanging around waiting for Glory, but if Glory is not to be found in the leaves, there is beauty enough in day-to-day life. That’s why I have an office in Crested Butte – if Nature isn’t cooperating, I can get plenty of work done and still have time to get out for some solitude on a trail run or social time on a walk with my neighbor.

There are only two more weeks of the Crested Butte Farmers Market, so I’ve made it a point to go and pick up greens and other goodies that I can’t generally find in the grocery stores around here (this ain’t no Boulder). Despite being a fraction of the size of Boulder’s Farmers Market (which I also love), CB has an incredibly friendly and charming vibe. It’s nearing the end for the heirloom tomatoes, so I plopped down a hefty chunk of change for several which I’ve been enjoying straight up this week. Our summers are short in the Colorado mountains, which makes me appreciate them far more than when I lived in The Land of Eternal Summer (Southern California).

Corn and peaches are growing scarce, but apples… apples and all things apple-y are on their way in. While at the market, I purchased my second jug of organic apple cider. I’ve been obsessed with these apple cider pancakes that my friend, Rachael, had mentioned a couple of weeks ago. First I fiddled with the recipe, then I served them to Todd and Diane on their visit last week, then I sent Jeremy home with a bunch to heat up for his breakfasts this week. So now I think someone else needs to make a batch before I turn into a pancake. Your turn! I should also point out that I liked them so much, I even shot the recipe here in CB (lots of kinks to work out still)!

When someone sells me anything with “apple cider” in the name, it had damn well better taste like apple cider or I get a little stabby. By default, almost anything calling for apple cider in a recipe is changed to “reduced apple cider” in my kitchen. This is how I roll. I personally prefer regular apple cider, but if you can’t get that, spiced apple cider is fine (or maybe you like that better). Apple juice is acceptable if you can’t find apple cider, although clearly inferior. I call it like I see it.

Recipe: pappardelle with chanterelles

My email has been inundated with inquiries from family, friends, and readers about our situation amidst the devastating flooding in the Colorado Front Range. Jeremy, Kaweah, and I are safe. Our house is fine. Our little mountain town of Nederland is more or less fine with only one viable route out of town – we are near the top where our water catchment area is relatively small. Thank you for your concern. Sadly, several neighboring mountain and canyon communities (Lyons, Jamestown, Salina) have been cut off and badly damaged from heavy flooding, mass wasting, road and ground collapse. All canyon roads in Boulder County are closed due to damage (sections of roads completely washed away) and/or rock slides, and it could be months before some of these roads open again. A normally 25-minute commute to Boulder might wind up becoming a 90-minute commute for a while. On the flats, parts of Boulder and surrounding cities have suffered terrible flooding as a year’s worth of rainfall collected in the mountains in a matter of a days and came funneling down the mountains as a wall of destruction and energy.

People poke fun at and bag on Boulder all the time. I just smile and sit on my hands so I don’t accidentally punch anyone. I suppose it is an easy target with all of its enlightenment, local food movement, yoga, ultra athletes, ultra outdoors people, food allergies, restrictive diets, casual atmosphere, dedication to local businesses, lovely parks, extensive bike paths, public services, love of dogs, Subarus, and countless independent coffee shops. It’s a special kind of place, one that I love dearly. It has a lot of heart and community. Good people live there and make it the great town that it is. Even though the rains have not yet stopped, people are already helping friends and strangers alike clean up flooded homes and neighborhoods.

Over the past several days, Jeremy and I have been safe, but stuck at home with an occasional walk around our neighborhood. Authorities requested that everyone stay home and let rescue and repair crews work. All parks and trails are closed. We snatched tidbits of news from friends, emergency status pages, and university alerts. Our hearts ached with every flash flood warning and flood surge that raced down the canyons. And we sighed with relief each time a friend checked in on Facebook, Twitter, via text or email. We even caught a few short breaks from the rains on Friday.

Saturday was Jeremy’s birthday. He turned 40, which is a milestone year because we are a decimal-based society and because he was awarded tenure a few months ago. His present is our second home in Crested Butte, so I didn’t feel compelled to get him anything else. We were going to have friends up to celebrate with a nice meal until those plans washed away with the roads leading up to our place. We didn’t want to risk the safety of any of our friends and decided to cancel. But that didn’t mean Jeremy wasn’t going to get his multi-course dinner party… I split it up into lunch and dinner since there was so much food. It’s all of his favorite dishes, which he gets to enjoy throughout the week.

I had multiple desserts lined up for our guests, but since it was just us, I stuck with the cake. We settled on one candle per decade so we wouldn’t burn the house down. Jeremy had requested a white Russian cake and I decorated it with little chocolate-covered crisped rice pearls. Placing each of those pearls on a cake is a labor of love.

We had the noodle dish at lunch because the Chinese tradition is to eat uncut noodles on your birthday for long life. There are so many noodle dishes to choose from, but I already knew he loves this one in particular and with good reason! It has chanterelles.

Recipe: green tea crème brûlée

I was feeling quite low Saturday morning. Kaweah’s moderate improvement went down the tubes. She barely moved, cried in pain anytime we tried to help her get up, and looked so depressed. It was completely unlike her, our normally happy little girl. Kaweah has a fairly high threshold for pain and we were both very concerned. Jeremy and I would stroke her belly to comfort her and look at one another wondering if this was it. We called our vet as soon as he got into the office and he added some more pain killers to the regimen of muscle relaxers and anti-inflammatory drugs. Within an hour of taking her meds, she was back to her old self – wandering around the house, wagging her tail, holding her head high, happy.

A college friend of mine had mentioned that he has traction socks for his dog on their hardwood floors. So I went to the store and picked up the only similar thing in stock. They’re little rubber booties. I wasn’t sure they would work, but I was willing to try anything.

They don’t bother Kaweah like her old hiking booties did (the ones she wore once, in the house and then never again). I think that’s partly because she has lost a lot of feeling in her hind paws. They do offer her incredible traction on our floors and she’s been walking around like a champ these past two days. Of course, we had to modify the booties – a clip at the tops so as not to cut off circulation in her ankles, and several holes on the tops and bottoms because her feet were getting hot and sweaty.

The combination of the non-slip booties and pain meds has turned Kaweah into a younger version of herself. We can’t get over how happy she is padding about the house asking to be let out on the deck, asking to be let back in (and so on and so forth). When she walks, the little rubber booties sound like clown shoes squeaking on the floors. As I look to see where my little clown is, I usually catch her tail wagging high in the air as she squeak-squeak-squeaks around the corner looking for wayward treats.

Kaweah’s recovery was just in time because my parents and my aunt (who is visiting my folks) came up to our house for dinner Saturday evening.

I wanted it to be a special dinner since it was my aunt’s first visit to our house and probably the last time I’ll host my parents this summer before they head home to Virginia. As most of my friends know, I serve multiple desserts to dinner guests. I love variety and I want guests to feel like they have a choice… or a sampler! Knowing that my dad is rather fond of crème brûlée, I went for a slightly Asian version: green tea crème brûlée.
