Recipe: baingan bharta (indian mashed eggplant)

Year after year, I look forward to those wonderful events that reliably happen in spring. This wackadoo teeter totter between snow storms and sunny days. The planters full of daffodils and tulips on Pearl Street in Boulder. A chorus of red-winged blackbirds by the lake that fills your ears when you run (or walk) by. Just this morning, we watched a yearling moose (following his mama) pass through the neighborhood, stopping to nibble on the young aspens in our yard.

Spring is also when I have various medical appointments. It’s been seven and a half years since my breast cancer diagnosis. After all of the surgeries, scans, chemo, radiation, blood draws, ER visits, and more surgeries, the aftermath seemed pretty tame. Managing lingering side effects – some temporary, some permanent – and getting on with my life, I felt that returning to normal was like winning the jackpot. And for the most part, life is normal and good. The further in time I drift from my diagnosis, the less cancer nags at the back of my mind. Dad always touts the power of positive thinking, but truth be told, that constant fear hovering over my shoulder for the first few years after treatment made me feel like I had failed. I couldn’t distinguish between my scar tissue and a possible tumor. Was that cough indicative of metastasized cancer? What caused that sharp pain in my side? While the intensity of my worries has faded considerably, it is always there like a low-level noise creeping in the corner of the room, growing louder when the night is still and dark.

I check in with oncology on a regular basis. It used to be every 6 months and has now transitioned to once a year. It’s bittersweet. When I walk in, I’m greeted by familiar smiles – all of the wonderful staff and nurses who cared for me during the infusions, gave me advice over the phone when emergencies arose, and continue to put in orders for my annual mammograms and MRIs. These are some of the nicest people you will ever encounter. This last time – yesterday – I exchanged hugs with each of them. While one asked how long it has been since I finished chemo, another was smiling and touching my ponytail. I typically ask local businesses if things have been busy, because busy is good for business. But it’s sad when oncology says they’ve been busy. They’re always busy. Cancer sucks. Eventually my oncologist bustles into the exam room like Santa Claus on Christmas doling out handshakes and hugs. He is the very best. Behind the closed door, Jeremy and I can update him with observations and questions interspersed with genuinely friendly conversation and laughs. He allays most of my concerns and follows up on the rest.

MRI in a week. Let’s get an X-ray while you’re here for the MRI and do blood labs after you’re done here today. How was that colonoscopy?

The colonoscopy was fine because I don’t remember any of it. The prep beforehand was unpleasant, but nothing compared to chemo. My instruction sheet said to stop eating all seeds, nuts, whole grains, and beans five days prior to the procedure. I thought that would be easy, but it was harder than I had anticipated. Everything in our kitchen seemed to have nuts, seeds, whole grains, or beans. The bummer was that I had made baingan bharta, a lovely Indian mashed eggplant dish, the day before. I could only stare at the leftovers in the refrigerator since the tomatoes and eggplants had loads of seeds.

Recipe: corned beef hash

Several posts back, a reader (Jasmine) asked how I got started skiing. I wish I could say I began as a little toddler, the way these badass little Colorado munchkins do – but I didn’t. I spent my youth on the water, sailing with my dad and my sister. I didn’t begin the love affair with gliding on snow until I was 22 years old when I was visiting Jeremy’s family over the holidays and they took me to the bunny hill at their local mountain.

Jeremy is a phenomenal teacher when it comes to most things. Skiing is not one of those things. He learned to alpine ski as a kid, for crying out loud. The first thing he did was point down the hill and say, “Just head over there.” As soon as I began moving, I realized that he had neglected to tell me how to stop. I proceeded to crash into the ground while making a mental note not to listen to that guy. Despite the terrible first lesson, I really loved skiing. Living in Southern California, we managed to get 5-8 days a year if we were lucky.

Then we moved to Ithaca, New York where we picked up cross country skiing (it’s free and we were graduate students). We continued logging single digit alpine days each year whenever we visited family in New Mexico. Upon our return to Southern California, we would spend a couple of weekends each year skiing at Mammoth Mountain. This was the first time I had seen a person telemark ski. I was riding solo on the lift watching this fellow carve graceful turns down the mountain such that I missed getting off the chair and had to do the “jump off and roll out of the way” move. But it was worth it.

We learned to telemark ski (with proper instruction) during our first winter in Colorado, ten years ago, and I’ve never touched a pair of alpine skis since. Being locals, skiing is no longer limited to vacations or weekends – it’s something we do for regular exercise during our snow months… September through June if we’re lucky! We ski the resorts, the backcountry, the local trails, the nordic centers: telemark, ski touring (skins and scales), classic, and most recently skate skiing. I love skiing. It kept me sane during my chemotherapy in 2008 and it keeps me happy and healthy now. So that’s the love affair in a nutshell!

Right, but enough about skiing (we still have a few more months to talk about skiing). If you are serving corned beef for Saint Patrick’s Day or just because they happen to be on sale EVERYWHERE, you might be fortunate enough to have some left over. I am actually far more excited about leftover corned beef than the corned beef itself. We ate a couple of slices of corned beef with roasted vegetables, but I already had plans for the leftovers which were actually 90% of the brisket. We enjoyed delicious reuben sandwiches with melty swiss cheese and loads of sauerkraut, and then I made corned beef hash – because I’m a savory breakfast kind of girl and this is filled with ALL OF THE GOOD THINGS.

Recipe: roasted cauliflower and garlic mash

No mashed potatoes for us this weekend! The mercury fell as did the snow – precious powdery snow. When it gets too hot and the snow turns to slush, some refer to it as mashed potatoes. And while mashies are fine to ski, it’s not the kind of snow that is long-lived as it transforms into ice overnight or eventually puddles of water during the day. At least for now, the snow gods have smiled down upon us and delivered. It was both a snow- AND friend-filled weekend. Our neighbor asked if I would mind spending a little play time with their pup, Dioji (dee-OH-gee), while they were away all day. She is a giant walking carpet of a dog (half Berner and half Great Pyrenees) who loves everyone and just wants to be loved in return – my favorite pup in Nederland.

We are delighted to return to our lovely, fluffy, Rocky Mountain powder. Mashed potatoes snow can wait until spring, when it’s supposed to be in season. As for the edible kind of mashed potatoes, I’ve been trying to move away from those as well. I personally LOVE mashed potatoes made with plenty of butter and some cream. After a while though, I want to change things up. That, and my pants don’t fit as well. I’ve been alternating between the occasional mashed potatoes and this other mash of roasted cauliflower and roasted garlic this winter. The cauliflower mash is so deliciously creamy without all of the pants-shrinking effects and it goes well with meats, vegetables, or even on its own.

all you need: olive oil, salt, pepper, chicken broth, fresh thyme, garlic, cauliflower
