Recipe: lobster miso ramen

As last week wound down, we took advantage of our proximity to decent trails and got Neva out on the snow again. Even if the snow isn’t ideal, it’s good for her to get regular training and exercise on and in the snow. Eventually, we’d like to get her on some of the dog-friendly nordic trails in Crested Butte this season. On Friday, she had doggy day care so I could run errands on the flats. While in line at a store, I witnessed an argument break out among three people in the next line over. Each party behaved badly. Each party escalated the conflict. Eventually there was a gesture, profanities, a shove, a retaliatory shove. These three adults – well into their 60s and all of them strangers to one another – were no better than squabbling children. As soon as the shoving began, I stepped forward and broke it up. “What the hell is wrong with people?” I asked Jeremy as we drove up the canyon.

After giving Neva a bath outside, we found ourselves asking that question again the moment we turned on our public radio station and heard the news headlines. My social networks had exploded with expressions of grief, horror, anger, fear, blame, hope, sympathy, self-righteousness, ignorance… I closed my laptop and exhaled my frustrations, “What is WRONG with people?!” In the morning, we opted to remove ourselves to the high country where we could scout out the snow conditions. Neva stayed home to rest as she was still exhausted from her daycare exertions. It didn’t matter that the snow was thin and covered in rocks in places. It didn’t matter that there was windslab on some slopes and that it was warm enough for the snow to stick to and clump on our skis. I just wanted to get outside and sort through my feelings, my thoughts. Jeremy is the only person I can count on to speak rationally, thoughtfully, and sensibly most of the time. We both benefited from the exercise, getting outside and having the backcountry to ourselves, and being able to share our thoughts quietly with one another.

We spent the rest of the weekend working and giving wide berth to frothing-at-the-mouth Facebook comment fights. It was a good time for comfort food. A couple of years ago, I had received a lobster ramen recipe from the PR machine of a local chef. Lobster ramen sounds divine, right? I mean, there is lobster – and then there is ramen. Boom! But after reading through the recipe, it wasn’t what I was craving. I think my Asianness demanded more Asian-y flavors, and this recipe was not only heavy on European interpretation, but it was also ridiculously involved. So I sat on the idea of lobster ramen until I found something more in tune with my tastes. Lobster miso ramen delivers on the flavors, textures, and it can be quite simple and quick to make.

You can probably find most of the ingredients at a typical grocery store that has a well-stocked Asian food aisle. For dashi (bonito fish soup stock), I use hondashi instant granules because they store so easily in my refrigerator. That’s something you probably need to get from an Asian grocer. As for the ramen, I had some leftover dried ramen to move from my pantry since my search for fresh ramen noodles at the Asian grocery store came up empty. I also read that curly ramen is better for miso broths because the miso tends to cling to those crooks in the noodles.

Recipe: miso peanut butter vegetable dip

We now have a 10 week old puppy who consistently sits to ask for things like food, water, toys, to be let out of her crate, to have a ball tossed, to be let back inside, to be petted. You may wonder why she has to request water – why we don’t have a bowl lying around for her to take drinks as needed… After Neva takes a big drink, she loves to place her paw on the side of the dish and tip the whole thing over. It was funny the first time and not as funny the next 10 times. But she’s a lab and true to her breed, she loves the water. We wanted to get her swimming, but right now our lakes are cold with snow melt and she hasn’t received her leptospirosis vaccinations yet (they start in a couple of weeks). So we’re taking baby steps starting with Kaweah’s old baby pool. Kaweah never cared much for it (she was a hardcore girl – she wanted her frozen mountain lakes), but it’s perfect for Neva at this stage on a hot, sunny day.

Everything was great until Neva fetched the ball, dropped the ball, and promptly squatted to relieve herself in the pool. We are still getting to know Neva’s bladder schedule, which is to say, we still have occasional accidents. But it’s all a big learning curve – which food works best for her digestion, what time of day is best for training, when she needs naps and when she needs play. It’s hard to believe we have only had Neva for two weeks because it feels like months.

Jeremy and I are trying our best to do right by the puppy’s training as well as live our lives (sleep, eat, get work done). It feels as if we aren’t succeeding at any of it. For the first week, I wore the same clothes for days in a row because I couldn’t see the point of putting something clean on only to get dogged up again. But you can’t let a puppy put the kibosh on everything. Over the weekend, a good childhood friend came into town for a conference – so we had her and two other close mutual childhood friends over for dinner. I even showered and wore clean clothes! I figured, if I could manage to put dinner on the table, then we could declare the night a victory. I missed out on half of the conversations because Jeremy and I tag-teamed supervising the puppy, but it was wonderful to spend time catching up, especially since I hadn’t seen the out-of-town friend in over 20 years.

Summer is when entertaining at our house really gets underway. The only folks who visit in winter are the ones who truly love winter and the ones who don’t know any better. Our short mountain summers are green and pleasant, which make for great dinner parties, grilling, and views from the deck. Typically, I like to experiment with different recipes, but lately – because of the puppy vortex and in the interest of my own sanity – I’m sticking with super simple menus. One thing I love to serve when the weather turns warm is crudités with dip, but sometimes I tire of sour cream or mayonnaise dips. A few weeks ago I tried a couple of miso-based dips and really fell in love with this miso peanut butter dip. It’s just the right salty and sweet to go with a variety of fresh vegetables. And it’s easy.

Recipe: miso-roasted cauliflower

Winter storms are marching across (or around) Colorado this week. We had a short 1-day window between storms to zip over to Crested Butte. There’s so much powder being dumped that it’s enough to make a girl’s head spin. So she might be forgiven for suggesting getting a handful of first tracks in the morning before packing everything up to drive 5+ hours. And now we’re about to celebrate our first Chinese New Year in the new place! I guess it isn’t so new anymore, but it still feels new. The important thing is that we all love it here, including Kaweah. Of course, she sleeps most of the time and it tugs at my heart that she can’t enjoy the high country, trails, town, or even the neighborhood with us the way she could just a few years ago.

Chinese New Year will be just a tad simpler in Crested Butte than normal, because the kitchen is smaller and the groceries around here aren’t so great for traditional Chinese cooking. I prepped several dishes in Nederland and will make the rest here on Thursday (Chinese New Year’s Eve) after we ski the powder. Yes, there is powder and a lot of it in the forecast for CB! We took a break from work on Wednesday afternoon to squeeze in a nordic ski and the snow was already falling. Getting outside is the very best medicine for me.

I can tell that the Crested Butte kitchen is slowly coming up to snuff because the types of meals I prepare here are converging with the types of meals I prepare at home. We ate a lot of simple dishes when we first moved in – boiled things, grilled things, roasted things. We still do a lot of roasted vegetables because it’s a lovely way to enjoy Brussels sprouts, broccoli, butternut squash, asparagus, carrots, potatoes, tomatoes, and cauliflower. I have always loved cauliflower and all vegetables thanks in no small part to my mom’s great cooking. Most of the time she would stir-fry or braise the vegetables, but now I’ve added roasting to that list of favorite techniques. It concentrates the sweetness and flavor so nicely, and it’s pretty easy to do. Roasted cauliflower is a real winner of a dish, but the other day I thought to add miso to the mix… because how could it be bad?!
