Recipe: sautéed morels and scrambled eggs

The past seven days have been the epitome of March in Colorado. It was sunny and warm on Tuesday, then Wednesday we hosted The Bomb Cyclone which dropped a good foot and a half of snow at our house, and by Friday it was back to sunshine and bluebird skies. Some refer to this as crazy or “drunk” Colorado weather, but for anyone who has experienced more than two springs in this state, it’s par for the course.

Our Colorado snowpack sits comfortably above average this season and we have fingers crossed that it bodes well for the health of the mountains and their denizens this summer. Water is everything in the American West. If you spend time getting to know the land, this axiom is paramount. Watching the big dump snow days is doubly exciting for us because 1) we love skiing powder days and 2) springtime snow is good for our local morels.

Yes, ever since February, the obsession over morels has been steadily increasing despite several feet of snow on the ground. Sometimes Jeremy and I will be working quietly in the office and I’ll say, “I love morels!” or “We should check X location for morels this spring.” We are weeks away from morel season in Colorado, but I recently saw fresh morels make an appearance in the mushroom bins at Whole Foods. These babies are now coming online in other parts of the country and that is exciting. If you happen to get your hands on morels, one of the easiest preparations with big return on investment (of time) is morels and scrambled eggs.

Recipe: blood orange sorbet

Who is excited for spring? Normally I’d be giving you all the stink eye, but I think I know why I, too, look forward to the vernal equinox this year. It’s because we’ve had a really good and snowy winter. Some years we get shafted on a proper winter and the arrival of March sounds like parents telling kids they have to leave the amusement park after two hours of standing in line and not even getting on the ride. But this winter brought the goods!

The time change last weekend threw us for a little loop and now we are totally into it. The best part is the dogs don’t know about the time shift! They are sleeping later (not really, but yes) and not demanding dinner until much later. It’s fantastic. Also, we have rearranged our bedroom furniture so that Yuki sleeps in a (big) crate at night and Neva’s bed is next to the crate and gated off. Containing the dogs overnight makes ALL the difference between a good night’s sleep and walking around sleep-deprived with back aches and a crick in your neck the next day. Now they hop on the bed in the morning AFTER we have rested.

A storm is about to barrel down on Colorado, but I am feeling spring-ish. Blood oranges are in season winter and spring (depending on the variety), and I couldn’t help grabbing a bag at the store a few weeks ago. Maybe you only indulge in sorbet when the weather is hot, but I love it all year. Even if you think the cold weather negates making sorbet, I have good news: you can freeze the juice and zest (separately) until the weather grows hot enough to warrant, nay – DEMAND, a batch of refreshingly bright blood orange sorbet.

Recipe: lentil beet salad

This winter has been deeply satisfying compared to last winter. First off, we are getting snow. Although the Colorado snowpack currently registers slightly above average, we find this exhilarating and refreshing. Second, Yuki is learning the ways of the Colorado Mountain Dog. Not only has she been our easiest dog to train, but she is loving her little snow adventures on the Nordic trails, the mountain, and in the backcountry. Third, Jeremy and I have been exploring new-to-us trails and scoping out potential mushroom spots for this spring/summer.

You might think with all of the great snow this season that we would never want winter to end. Not so. I do love my winters very much, but I find joy in every season. The extra daylight as we inch closer to spring has my brain spinning in anticipation of crust cruising, the sound of snow melt trickling past newly sprouted blades of grass, hunting morels, the return of birds and their songs. Don’t even get me started on summer. We have high hopes for some big hikes and backpacking trips with Neva and Yuki. Of course, I am certain come July I will be pining for the cold starry nights, fluffy snow, and long-simmered stews of January. I love it all.

After the celebratory dishes for Chinese New Year, a chocolate shoot for a client, and recipe testing sweets, I just want to eat salad. These days my salads take on the hearty form of a meal in contrast to the delicate summer counterparts loaded with seasonal greens and presented as side-dishes. I like sweet, sour, crunchy, nutty, earthy components in my bowl. The beauty of the salad is that you include or omit ingredients according to your tastes. Here are some of my favorites.

I find the easiest way for me to regularly eat salads is to prep the ingredients at the start of the week so that I essentially have a “salad bar” from which to pack or assemble my lunch. If you use dried lentils and beans, that means cooking them ahead of time. Of course, to save time, you can purchase cooked lentils (I’ve seen them pre-packaged at Trader Joe’s) and canned beans. Same applies to beets – you can cook them (roast or boil) or purchase them already cooked or pickled.
