Recipe: passion fruit mochi

Before I forget, I wanted to share my composite of the eclipse so you could get a feel for the whole progression. It’s kinda cool and especially great to show and explain to kids, big and small.

Last month, I got a super sweet email from Viva Singer, a reader who told me that her office in Montreal loves to check out the recipes on use real butter and that everyone at work thinks Kaweah is adorable. As a thanks for sharing recipes, she wanted to send me a dog collar for Kaweah, because that’s what her business, Hot Dogs All Dressed, makes – beautiful, hand-crafted collars for dogs and cats. I said it wasn’t necessary to send Kaweah anything because she’s such a hillbilly dog, but that I’d love to donate one to a dog at my local shelter and perhaps arrange for a giveaway on the blog.

Viva mailed two durable, quality collars for Kaweah to model and said if she really liked one, she could keep one and give the other to a shelter pup. Kaweah is as fashion-ignorant as I am. She would only want a collar if it were made of meat, cheese, apples, peanut butter, well… food. But we took her for a walk wearing the nice black leather collar studded with shiny red hearts. She looked so hip!

Once we arrived at the lake, it was obvious that Kaweah intended to go for a dip. I had anticipated this (she’s a lab, of course she’s going to want to go swimming) and brought the hydro collar along.

These are lovely collars that can be custom-made to order and Viva was kind enough to offer me five dog or cat collars to give away to five of my readers. I, in turn, will ask each winner to name a local animal shelter to which I shall donate $20. Hot Dogs All Dressed works a good bit with their local rescues, so they thought this was a terrific idea. Kaweah agrees.

I had blogged a chocolate mochi cake in April, but during my search for a recipe, I came across another recipe that caught my fancy. It was for a guava mochi and the recipe was even more simple than the chocolate mochi cake! A footnote at the bottom stated you could substitute passion fruit juice for the guava juice to make passion fruit or liliko’i mochi. So, you know where this is going…

Now, this needs to be said, because some gluten-free people completely freak out when they see glutinous rice flour and assume it has gluten in it: GLUTINOUS RICE FLOUR CONTAINS NO GLUTEN. It’s an unfortunate naming convention to describe how damn sticky this stuff gets. Glutinous rice is sticky rice.

The passion fruit juice isn’t something that I come by easily around here. Most of the time I have to make it from frozen passion fruit concentrate that I find in California and hoard in my freezer. But I happened to have four cups of real passion fruit pulp in my freezer which I ran through my food mill to end up with about 2.5 cups of precious liquid gold.

Recipe: homemade marshmallows

Yes, I’m talking about snow… sort of. Actually, I’m also talking about marshmallows which, as you know, invariably brings us to eating s’mores après ski at the Park Hyatt Beaver Creek Resort and Spa at Beaver Creek Ski Resort in Avon, Colorado. The Park Hyatt BC invited me over to experience their brand of hospitality on the mountain, literally. Ski-in ski-out access to one of Colorado’s premier ski resorts? S’mores after the lifts close? Fine dining at 8100 feet? I needed to verify this before the snowpack up and walked (melted) away.

Last week, a box of goodies arrived in the post, courtesy of the Park Hyatt Beaver Creek. There was an adorable ceramic s’mores cooker, marshmallow skewers, s’mores trays, graham crackers, chocolate, and four flavors of housemade marshmallows developed by their chef: orange creamsicle, coffee, crème de menthe, and vanilla. Normally, it would be too cold (and windy, don’t forget windy) to enjoy these on our deck – except this season has been anything but normal.

What a sticky, gooey, messy, fabulous treat to share with people who won’t laugh at you for having chocolate and marshmallow smeared all over your mouth! It was the Park Hyatt’s way of sharing their s’mores tradition with me, someone who loves skiing, loves Colorado, and especially loves skiing Colorado. But it’s not just ME they wanted to bring this to… they want to bring it to YOU!

The reason I love s’mores is because I am a complete sucker for marshmallows, and nothing compares to homemade marshmallows. This whole s’mores lovefest got me thinking that it’s high time I attempted to make my own marshmallows.

Recipe: chocolate cloud cake

I hope you all had a good weekend. Mine, you ask? Well… you might say it was EPIC.

See that? That’s a newly cleared driveway. That driveway, which belongs to me, was ever so sweetly snow-blown by my dear neighbor who saw me desperately shoveling 18 inches of fluffy white at 7:30 am so I could go ski at the local hill when the lifts opened. My neighbor is going to get chocolate in the very near future.

Best. Day. Of. The. Season. And poor Jeremy was at a conference in South Africa all week. We got a total of 31 inches at my house over the course of 1.5 days, which ain’t too shabby in my book. Of course, being Colorado, you can’t keep the sun away for long at all.

It seemed when I wasn’t skiing, I was shoveling snow. Kaweah was my little shadow as I dug paths through the thick white blanket. She used to go bounding into the deeps, but is too old to get herself unstuck these days. I keep her close and she has fun shoving her schnoz into the walls of snow and sneezing in delight. The neighborhood is winter white. Jeremy is back home. Things are right with the world.

And it’s February. Did you notice that too? I normally have nothing but scorn for Valentine’s Day. I don’t like pink and I think this sort of mass social pressure on men to do something nice for women is just plain stupid. Men should be nice to women all the time. And vice versa. Everyone just freaking be nice to everyone, will ya? I realize that’s a bit much to ask.

But this week I am feeling the love in the kitchen. Oh, I don’t know. Perhaps it’s all of that powdery snow (and no winds – yet) putting me into the mood to make sweet treats. Maybe Valentine’s Day is just a coincidence. Who cares? We’re talking chocolate.

I don’t love chocolate the way most of the world loves chocolate. We get along fine and leave it at that. However, I do enjoy baking with chocolate and distributing it to friends who give chocolate a better home than I can (in their tummies). Those quick and easy recipes attract my attention because no one around here is made of spare time.

I made a chocolate cloud cake. The soft, white cloud of whipped cream caught my fancy at first, but then I liked how relatively simple the preparation was. It’s a flourless chocolate cake and I’ve blogged flourless chocolate cakes before. This one folds in whipped egg whites, which I was curious to try.
